The Secret to Sizzling: Ushma’s 15-Minute Indo-Chinese Chilli Garlic Paneer

Growing up as the eldest of seven girls with Indian and East African heritage, meal times were always a vibrant, noisy affair centered around recreating passed-down recipes. Indo-Chinese street food perfectly captures that exact energy—it’s all about high heat, crispy textures, and fearless flavour.
Today, I’m bringing a piece of that street-food energy into your home by sharing the secret to one of the most popular dishes from our new menu: Chilli Garlic Paneer.
The Technique: Mastering the Sizzle
The secret to achieving that authentic restaurant-quality sizzle isn’t just what you put in the pan; it’s how you cook it. The trick is mastering the “wok toss” over high heat.
You need your wok or frying pan to be screaming hot so that when your garlic, chillies, and spices hit the oil, they instantly release their aroma—a technique we call the “Tadka”. Don’t be afraid of the heat! Embracing the sizzle is the first step in building your true culinary confidence.
The Recipe: 15-Minute Chilli Garlic Paneer

The Method:
- Fry & Crisp: Heat a splash of oil in your wok and fry the paneer until golden and crispy on all sides. Remove and set aside.
- The Sizzle: In the same hot wok, add your garlic, ginger and green chillies. Let them sizzle in the hot oil for 10 seconds to release their flavour.
- The Toss: Throw in your chopped onions and peppers. Toss them rapidly over the high heat for 2 minutes—you want them slightly charred but still holding a fresh crunch.
- The Sauce: Pour in your soy sauce, tamarind sauce and sriracha sauce. Let it all then bubble and thicken for about 30 seconds.
- The Finish: Add your crispy paneer back into the wok. Give it one final, confident toss so every piece is coated in that sticky, spicy, garlicky glaze and garnish with coriander. Serve immediately and enjoy the magic!
